One of his favourite foods is sweet potato fries, so here is a quick tutorial on how to make your own- without frying!
Clean your potato but don't peel it, then cut your potato into fries. I made steak fries this time but usually I will make them a bit smaller. No matter how big you make them though, make sure your baking sheet is large enough to hold them all without crowding. The more space between the fries the better they will brown.
Once the fries are dry you can season them however you like- my current obsession is jalapeno powder with homemade garlic salt. (Also amazing on popcorn!) Toss to coat evenly.
Make sure your oven is preheated and the oil is warm, then pour the potatoes in the pan. Give them a shake just to coat the oil evenly then close the oven door and leave them alone for 5-10 min. When you check them the side that was down should be getting crispy and brown. Flip and repeat until the fries are all nicely brown. Obviously the smaller your fries are the less time this will take. If you find that your fries are cooking through but not getting crispy, turn your oven up.
When your fries are done you should have fries that are fairly dry on the outside, with a thin, crispy skin, and a soft, smooth center. If your fries are pretty big you may notice that they are pretty flexible. If you like your fries more of the stick-straight and dry variety, keep your pieces small and short.
