Not Chocolate Chocolate Cookies

Sometimes, when you don't really have much of a job and the day is early and there isn't yet sun outside, you get bored. And then you decide you absolutely HAVE to bake something or go crazy. But then you realize that not only do you not have the double boiler, microwave or baking sheet that you need, but you also have no eggs. You however, are stubborn and still bored, so you decide to go through with your ONE day's ambition no matter what. Things are bought, sacrifices happen, compromises get put forth, a dough is made and Hulu episodes you are months behind on get caught up while you wait for your dough to chill. 

And yet....things still go wrong. You forgot a little something. Your compromises and sacrifices have led to a slight difference in the consistency of your dough and it changes EVERYTHING about the way the cookies bake. 

But you will not be defeated. You tweak. You improvise with a little common sense. And Lo! Hours later, after the sun has come out, cookies appear where before there was only doubt and wry amusement at your lack of baking essentials.

This was my day. My Mom got me this book for Christmas and I have been waiting to make something from it. I finally got around to buying one of the odd flours it calls for and settled on a recipe. 
Chocolate Chocolate Cookies Recipe
Chocolate Chocolate Cookies made with spelt flour. The spelt smelled good; kind of like a box of Multi-grain Cheerios. There was no double boiler or microwave though, so I decided to nix the first of the 'chocolate's and just turn the recipe into a chocolate chip cookie dough. Which more or less worked, until the dough didn't get chilled enough and melted too fast in the oven, threatening to pour off the sides of my cooling rack+silpat baking tray. But I persevered and managed to freeze the dough in little groups. This took way too long, especially on such a nice day when you don't really want the oven on, but it resulted in cookies that actually kept their shape.

The upside to all of this is that the cookie dough tasted amazing and the cookies themselves aren't that bad either. They would be perfect dipping cookies, if you are into that sort of thing. I am not; I don't even like dipping biscotti! 

I'm not going to transcribe the recipe for you all considering what I actually ended up doing was nearly unrecognizable to the original (shocking, I know). But If you want to know a little secret, vanilla sugar and a little lemon zest go a long way in adding flavour.
