A happy Valentine's Day to you all! I wanted to join in on the fun and post something that would be appropriate for a day steeped in red and pink. I enlisted a friend to help and together we made Mary Rolls- short for blood orange marmalade rolls. First I made a cinnamon roll dough but added vanilla to the recipe since there wouldn't be an icing. Fun fact: if you incorporate the vanilla (I used paste but this goes for extract or beans as well) into the fat of the recipe (butter) first, the flavor stays much more prominent. The fat actually encapsulates the vanilla and decreases the amount that evaporates during cooking. The marmalade was a mix of blood oranges, cara cara oranges and pink grapefruit. We based the proportions off the Three-Citrus Marmalade in Good to the Grain. We ended up using 5 blood oranges, 3 cara caras and 2 grapefruits. First you zest some of the fruit, boil them for 30 seconds then rinse under running water. This helps get rid of the extra bitterness that peels normally give off. Then when you've peeled, chunked and seeded the rest of the fruit you throw it all into a pot with as much water in volume as you have of fruit. Then you boil and boil and boil until it reduces by half. Then you add half as much sugar as you had of fruit and the peels and then boil some more until it hits the consistency of jam. This whole recipe and process takes a while, so I suggest either splitting this up over a few days or making sure you have the day off before you start. When the dough had doubled and the jam decreased I combined the two. I rolled out the dough, brushed it with butter, spread a layer of marmalade over the top and then sprinkled coconut over that. Rolling this is way harder than it looks, by the way. And isn't my new apron cute? Thanks, Gramie! It is much easier to roll up the dough if you have another person helping. The marmalade tends to just squish itself out from under the roll, so it is best to sort of lift and turn rather than press and roll. Thanks to Lis, I now know that thread is the easiest way to cut dough into pieces, especially if it has a filling; just slide the thread under the roll then bring up, twist and pull down until the loop cuts through. Place your rolls in a greased pan and let rise again. Once they are done rising again bake at 350* for about 35 min. Enjoy with a cup of milky tea (I suggest Earl or Lady Grey) and your special Valentine.
